Enjoy Diwali Lunch with this delicious heavenly Sitaphal Almond Basundi. I have used crunchy, sweet and fresh Australian Almonds which are freshest in this season and you will enjoy its crunch till the last bite.

🥣 Ingredients List
.
* 2 medium Sitaphal (Custard Apples)
* 10-15 Australian Almonds, blanched and sliced
* 1 litre Full Cream Milk
* cup Condensed Milk (or sugar to taste)
* Rose petals and extra almonds for garnish
.

Recipe
.
- Take 2 medium size Sitafal, remove the seeds and take out the pulp as shown in video.
- Keep the pulp in the fridge.
- Take 10-15 blanched almonds, remove the skin and cut it in a slice.
- Now in a kadhai, take 1 litter full cream milk, bring it to boil.
- Lower the heat to medium and add 1/4 cup condensed milk. (You may add sugar also).
- Keep stirring and reduce the milk to half.
- Then add blanched almond, turn off the heat and let the basundi cool down completely.
- Then add chilled sitafal pulp into the basundi, mix it well and keep it in refrigerator for at least 2 hours.
- Garnish Sitafal Almond Basundi with some rose petals and almonds.

This festive season, balance out the sweets with a healthy, savoury snack! These Sweetcorn Handvo Bites are perfect for your get-togethers & are a fantastic, healthy twist for school lunchboxes, a delicious and fun way to make sure everyone gets their veggies!
.
Recipe-
- Take 2 raw sweetcorn, remove kernels.
- Take 1/2 of the kernels and crush them coarsely. Leave the remaining half kernels as whole.
- Now in a bowl take both crushed and whole sweetcorn.
- Into that add, 1/4 cup shredded carrot, 2-3 tbs finely chopped French Beans, 2-3 tbs capsicum finely chopped, 1 big onion finely chopped, a few finely chopped cloves of garlic, fresh coriander finely chopped.
- Mix everything.
- For masala, add 1/2 tsp Haldi powder, 2 tsp Kashmiri Red Mirchi Powder, 2 tsp Coriander Powder, and 1 tsp Kitchen King Masala, and Salt as per taste.
- Then add 1/2 tsp Hing(Asafoetida).
- For binding, take 1/4 cup cooked rice (You can take rice flour as well,), 3/4 cup sooji (semolina) and 1/2 cup Besan.
- Mix everything well and then add 1/2 cup sour curd and 3 to 4 tbs water. (Add water gradually, if required add more but be careful as veggies will also ooze out water).
- Mix everything well and just before the cooking add 1 small packet of fruit salt (eno).
- At the same time heat up the appe pan on medium flame.
- Take oil in each cavity, a few mustard seeds and some sesame seeds.
- Once they crackle, add the handvo batter. Cook Handvo on slow to medium flame till you get nice golden color on each side.

TO MAKE SPICY CORIANDER CHUTNEY -
- In a chopper, take 2 cloves of garlic, a few fresh green chillies, 1 cup coriander and 2 medium size tomatoes
- Add salt per taste and squeeze 1 fresh lime juice.
- Coarsely grind/chop everything together to make spicy tomato chutney.

Enjoy this Handavo with Tomato Coriander Chutney or any other chutney / dip of your choice. I love to partner this with a hot cup of chai.

HIGH PROTEIN KALA CHANA RICE WITH HIGH FIBRE PRUNES RAITA

This recipe pairs high-protein Kala Chana Rice with high-fiber Prunes Raita make an ideal combo. The fiber in prunes helps with protein digestion, making this not just a delicious meal, but a smart one too. The mild sweetness of the prunes in the raita perfectly complements the spicy kala chana rice, creating a balance you’ll love.
I used prunes from Chile, which you can easily find online or at your local grocery store.

Recipe -

Kala Chana Rice
* In a pressure cooker, heat 2 tbsp ghee. Add bay leaves, a cinnamon stick, 3-4 cloves, and 2 tsp cumin seeds.
* Once the cumin crackles, add 1/2 tsp asafoetida (hing), finely chopped ginger and garlic, and saute for 5 minutes.
* Add one large sliced onion and some salt, frying until the onion is cooked.
* Stir in 2 tsp chili powder, 1 tsp turmeric powder, 2 tsp coriander powder, and 1 tsp garam masala. Cook for 5-7 minutes on low heat.
* Once the masala releases ghee, add the puree of 3-4 tomatoes and let it cook.
* Add overnight-soaked kala chana and 1/2 cup water. Pressure cook on medium heat for 3 whistles.
* After the cooker cools, add finely chopped capsicum and carrot.
* Stir in 1 cup of rice (soaked for 30 minutes) and 1 cup water. Pressure cook for one more whistle on medium heat.
* Garnish with fresh coriander.
Prunes Raita
* In 1.5 cups of beaten curd, mix in 2 medium shredded cucumbers, 6-8 finely chopped prunes, salt to taste, 1/2 tsp roasted cumin powder, and chili powder.
* Mix well and serve chilled with your kala chana rice.

🌟 **Who says you can’t enjoy sweets without sugar?** 🌟 This festive season, I’m excited to share my guilt-free SUGAR FREE Fresh Coconut and Dates Laddoo recipe, specially made for Ganpati Bappa! 🍬✨

Recipe -
.
1️⃣ Take 1 fresh coconut (medium size)- in terms of measurements, it should be 2 cups.
2️⃣ Remove the brown skin, cut it in small pieces and blend it in a mixer jar with 1/2 cup full fat milk. (Blend it Smooth).
3️⃣ Now in a Kadhai, boil 2 cups full cream milk, into that add coconut mixture and 4-5 elaichi powder. If you want, you can add 1/4 cup milk powder also. (Optional). Stir continuously; as this mixture tends to get stuck at the bottom - heat should be medium and keep stirring. Boil the mixture till it reduce to half.
4️⃣ Now in a blender jar, take 1/4 cup cashew nuts and around 20 dates (remove the seeds and soak dates in warm milk for half an hour) and make a smooth paste.
5️⃣ Add this paste into the coconut mixture when the mixture is further reduced due to continuous boiling.
Along with that add 1-2 tbs ghee. Keep stirring this mixture it becomes completely dry and thick. ( Once it’s almost done, it will splash around the Kadhai, so be careful while stirring)
6️⃣ Once the mixture gets dry and starts leaving the surface of Kadhai, turn off the heat, take this mixture out and spread it on a plate. Let it cool down completely. You can leave the mixture in the fridge for few hours if required.
7️⃣ Then make laddoos out of this mixture and roll them into the mixture of Pistachio and Dry Coconut.

Bringing in the festive cheer with these healthy and delicious Ragi Churma Modaks! 🙌✨ This Ganesh Chaturthi, welcome Ganpati Bappa with a treat that's not only tasty but also packed with good-for-you ingredients. Ragi is a source of calcium and a healthier alternative.

Ingredients

* For the Dough & Churma:
* 1 cup Ragi (Finger Millet) Flour
* Pinch of Salt
* Hot Water (less than 1/2 cup, as needed)
* Ghee (for cooking)

* For the Nut & Seed Mixture:
* 2 tsp Ghee
* 12-15 Almonds
* 12-15 Cashews (cut into pieces)
* 1/4 cup Peanuts
* 3 tbsp White Sesame Seeds
* Elaichi (Cardamom) Powder (as per taste)

For the Jaggery Syrup:
* 1/4 cup Jaggery (powder or grated)
* 2 tbsp Water

Recipe-
- În one cup Ragi Flour, add a pinch of salt and knead the dough with hot water (add hot water as required. It will take approximately less than 1/2 cup water, do not add it one time).
- Make soft dough.
- Heat the flat pan on a medium flame. Grease it with Ghee.
- With wet hands, take a portion from prepared dough, and spread it thin on the pan. Keep flames medium only.
- Cook this dry on both sides, then apply 2 tsp Ghee on each side, and cook till you get golden color. In between keep pressing it with spatula so that you get crispy texture.
- Once it’s done, take it out on wire rack and let it cool down.
- Tear it with your hands and then take it in a mixture jar and coarsely grind it on a pulse mode. Texture should coarse.
- Now in a pan, add 2 tsp Ghee and add 12-15 almonds. Roast it on slow flame.
- Once it’s almost done, then add same amount of cashews cut into pieces, 1/4 cup peanuts and 3 tbs white sesame seeds.
- Roast everything together till you get nutty fragrance.
- Take it out in a bowl and let it oool down.
- Once it’s cool down, coarsely grind it with some elaichi powder.
- Add this nut mixture into Ragi Churma.
- Now in a sauce pan, take 1/4 cup Jaggery (you can increase or decrease the quantity according to your taste).
- Add 2 tbs of water in it and let it cook on a medium flame till mixture becomes sticky. (You don’t need any kind of chaasni in this).
- Pour the hot jaggery mixture into Churma mixture. Mix everything well when the mixture is hot.
- Pro Tip : Shape or bind the modak when the mixture is warm only - do not let it cool down.

Happy Janmashtami! This festival, celebrate the birth of Shree Krishna with a sweet treat that’s as quick as it is delicious. I’ve made these Kaju Pista Peda, a low-effort, fireless recipe that takes just 15 minutes to prepare. Jai Shree Krishna!

Recipe -
Ingredients
* 1 cup cashews
* 1 cup milk powder
* 1/2 to 3/4 cup Mishri powder (adjust to your sweetness preference)
* 4-6 cardamom pods, crushed into a powder
* 3-5 tablespoons milk
* 1/4 cup pistachios, ground
* Ghee for your hands
.
15-Minute Fireless Recipe
* Grind 1 cup of cashews in a blender on pulse mode until you have a fine powder. Do this in two batches to prevent the cashews from releasing oil. Strain the powder.
* Add 1 cup of milk powder, 1/2 to 3/4 cup of Mishri powder, and the cardamom powder to the cashew mixture. Mix everything well.
* Slowly add 3 tablespoons of milk and mix until a soft dough forms. If the mixture is sticky, gently knead with some ghee on your palms. Add a little more milk (up to 2 tablespoons) if the dough is too dry. The final dough should be similar to chapati dough.
* Divide the dough in half. Grind the 1/4 cup of pistachios into a fine powder and mix it into one half of the dough with 1.5 teaspoons of milk. Knead it again to create a smooth pistachio dough.
* Take a small portion of the pistachio dough and form a small ball. Wrap this ball in the cashew dough and roll it into a smooth, tight sphere.
* Let the peda rest for 10 minutes, then cut it to reveal the layers.
