"Wild flower. Refreshing. Persimmon.
Traditionally rice-straw shaded Matcha with a wild botanical bouquet and thirst-quenching cool sweetness.
From Kumaさん in Joyomachi, Recipient of the highly prestigious Minister of Agriculture, Forestry and Fisheries Prize (農林水産大臣賞.)
Direct and vivid saturation that foams well. Aroma has a touch of Hi, a roasty aroma, that comes from an additional toasting step done in with Yamecha (八女茶), or tea from Yame, Fukuoka, Japan.
As dry power, the savory Nori scent is dominant, which relaxes into a sweet dried-fruit, nearly persmisson once water is added to the tea.
Texturally, the Matcha has a polished broad shoulder, which drapes like damp wool down the edges of the tongue. The flavor is fresh, green, botanical, and politely sweet - characterists of the Saemidori cultivar itself. It reminds me of wild forested honey."

Desk of the highly awarded tea farmer, Kurazumiさん in a region of Japan known as Yame, or specifically a village known as Hoshinomura.
Owner of one of Japan's oldest Tencha factories - and recipient of the highly coveted 1st place Gyokuro category in Japan's National Tea competition this year. He took the award on the 600th anniversary of Yame!
Ooika sells his Matcha, which we fresh ground here in the USA. Tastes like sun showers, unsalted butter and raw almonds.

Kurazumiさん Okumidori (おくみどり) Hoshino Matcha - 2023 vintage.
From this year's FIRST PLACE winner in the Gyokuro category at the highly competitive National Tea Competition (全国茶品評会): Kurazumiさん.
Winning first place in the competition has the same distinction as a chef being awarded with 3 Michelin stars.
The tea bushes Kurazumiさん grew to produce this tea were grown steps away from Japan's top Gyokuro.
Tastes like sun-showers, unsalted butter, and raw almonds.

Ooika is thrilled to join Soy Te in Guadalajara Mexico for two classes and one demonstration.
Our first class is “Tasting and Understanding Matcha (Beginner Friendly!)”, followed by our more advanced Matcha Deep Dive (Intermediate Matcha Class.)
Finally, Marc of Ooika will be demonstrating the Japanese Tea Ceremony Ryakubon (略盆) Temae.
Unfortunately, all tickets to all three events are sold out — but many clips and videos of the event will be posted here on Instagram and on the Ooika YouTube channel.
