Keto Coconut Chicken Adobo
Highfalutin' Low Carb

Serves 6 to 8
Prep time: 10 minutes
Cook time: 50 minutes
Total time: 1 hour

I’ve taken inspiration from a traditional adobo recipe and changed some ingredients to make it my own. Soy sauce is an essential ingredient in adobo, but most keto dieters don’t consider it keto friendly because of the soy. I use Bragg Liquid Aminos or coconut aminos, which contain no soy but have a similar color and flavor. They can usually be found in the ā€œhealth foodā€ section of the grocery store, usually for the same price as a good-quality soy sauce. This dish is perfect served over cauliflower rice.

3 pounds bone-in chicken thighs
2 tablespoons olive oil
1 (13.5-ounce) can full-fat coconut milk
1/2 cup white vinegar
1/2 cup water
1/4 cup liquid aminos or low-sodium soy sauce
2 teaspoons freshly ground black pepper
1 small white onion, sliced
3 garlic cloves, minced
3 bay leaves
2 or 3 scallions, sliced (green parts only)
Lime wedges, for garnish

1. Pat the chicken dry with a paper towel.

2. In a large pot over medium-high heat, heat the oil until shimmering. Add half of the chicken and cook until lightly browned on both sides, 5 to 7 minutes. Transfer to a plate and repeat with the remaining chicken, also removing it to the plate.

3. While the chicken is cooking, in a medium bowl, combine the coconut milk (shake the can vigorously before opening to incorporate the fat), vinegar, water, liquid aminos, and pepper. Whisk to combine.

4. To the oil in the pot, add the onion and garlic. Cook until the garlic is fragrant, about 2 minutes, stirring constantly so it doesn’t burn.

5. Return the chicken to the pot and add the bay leaves. Pour the coconut milk mixture over the chicken. When the liquid starts to approach a boil, lower the heat to medium low, cover, and allow to simmer for 20 minutes.

6. Remove the lid, gently stir, and allow to simmer for 15 minutes more, uncovered, for the sauce to thicken.

7. Transfer the chicken to a serving platter, spoon over some extra sauce, and garnish with the scallions. Squeeze a bit of lime on top just before enjoying.
