I proof in the oven with the light on since my kitchen is under 68 in the winter and pushing 74+ in the summer. Keeps my results more consistent. May be an interesting comparison to the proofing box.

My oven has a bread-proof setting that I use when it's colder, or if I want to speed it up

I put my starter by the coffee pot with a little bowl coozy underneath (my granite countertops are cold). When I bulk rise I do the same thing to the bowl the dough is in. If I’m not making coffee, I’ll turn on my electric tea pot which is also nearby.

I have a proofing box... but I've been using it for my kombucha. My kombucha really likes it.
