Chef Otto tay是馬來西亞隊伍成員,在2019年在Coupe du Monde de la patisserie 世界盃甜點大賽中,獲得世界冠軍。 Chef Otto Tay is a member of the Malaysian team and won the world championship in the Coupe du Monde de la Patisserie World Cup Dessert Competition in 2019.

*The Coupe du Monde de la patisserie World Cup Dessert Competition is known as the "Olympics of the Dessert World Competition". It only happens once every two years. The participating teams must complete a sugar showpiece/chocolate showpiece/ice sculpture showpiece/3 chocolate mousses/3 ice cream desserts/15 plated desserts within 10 hours.*
Fukusayas Castella may not be your favourite, but it must be the oldest Nagasaki cake in Japan.
Fukusaya was founded in 1624 as an imported sugar and rice trader.
KASUTERA (Nagasaki Castella prototype) was introduced to Nagasaki from Portugal in the 16th century. Because of its business, Fukusaya became the pioneer of making Castella in Japan and started selling its own Nagasaki cake.
The ingredients of Nagasaki Castella are only eggs, sugar, syrup and flour, especially lots of eggs and sugar.
From 1603 to 1868, sugar was still a high-end product. Although Japan began to promote the cultivation of sugar cane and sugar production.
Nagasaki cake was a very high-end dessert at that time.
Until modern times, Fukusha has continued innovating different kinds of Nagasaki Castella.
Special Gosan-yaki Castella: more eggs and sugar and less wheat flour.
"White Ju" only uses egg whites, sugar, syrup and flour.
"Yellow Ju" only uses egg yolks, sugar, syrup and flour.
What I bought this time was the original Nagasaki Castella.
A huge amount of sugar is used to preserve the moisture.
The texture of the cake is fine and elastic. White Crystal Sugar is used at the bottom to increase the texture
What is White Crystal Sugar?
A type of sucrose crystal sugar.
It is colourless, and high-purity sugar.
It is quite resistant to high temperatures and can remain transparent under high temperatures.
Moreover, the particles are coarser, and the crystal particles are larger than fine sugar and smaller than rock sugar. You can directly see the sucrose crystals.
Therefore, it is called "あらめ" (rough eye).

福砂屋
福砂屋的長崎蛋糕,可能不是你的最愛,但它一定是日本最古老的長崎蛋糕。
福砂屋創業於1624年,本是進口砂糖和米的貿易商。
當KASUTERA (長崎蛋糕原型) 於16世紀由葡萄牙傳入長崎。
福砂屋學到其製作作法,也開始出售自家的長崎蛋糕。
長崎蛋糕的原材料雖然只有以雞蛋、砂糖、糖漿和麵粉。
它使用大量的雞蛋和砂糖。
雖然日本在1603年-1868年開始推廣種植甘蔗和製糖,但砂糖依然是高檔貨。
所以長崎蛋糕在當時是十分高級的甜點。
直到現代,福砂屋經過不停的創新,也出現:
特製五三燒: (Special Gosan-yaki Castella) 蛋與砂糖較多而小麥粉較少。
「白菊」只使用蛋白、砂糖、糖漿和麵粉。
「黃菊」只使用蛋黃、砂糖、糖漿和麵粉。
而今次所買的是原味道的長崎旦糕。
因為長崎蛋糕使用大量砂糖,來保存蛋糕的濕潤性。
蛋糕氣泡質地細緻,有彈性。
而底部使用白雙糖(*注1),增加口感
什麼是白雙糖?
它蔗糖結晶的一種。 透明無色的高純度砂糖。相當耐高溫不易焦化,於高溫下還可以保持透明
而且顆粒較粗,結晶顆粒比細砂糖大、比冰糖小,是可以直視到蔗糖晶體。
故稱為「あらめ」(粗目)。
