From 300lbs to Bodybuilding: Erinkate’s Journey šŸ’ŖšŸŒ±

Meet Erinkate Morrison, a former classroom teacher turned nutritionist and fitness coach from Maine. Before finding me, Erinkate was over 300 pounds and knew she needed to lose weight but hit a plateau.

Working with me, she learned about macros, the vegan community, and compassion. She shed over 145 pounds and even dabbled in bodybuilding, something she never thought she’d do!

If you’re on the fence, my advice is to DO IT. You don’t have to become a bodybuilder, but you will achieve your results faster with accountability. āœ…

Thank you, Erinkate, for sharing your journey, and shoutout to your supportive daughter, boyfriend, family, and friends.

Organic vs Non-Organic: What Really Matters?

You hear it all the timeā€”ā€œGo organic or go home.ā€ But is there really that big of a difference? Let’s break it down.

šŸ” How to Spot Organic Fast
Check the barcode:
āœ… Starts with 9 → Organic
🚫 Starts with 4 → Non-organic

🧪 The Science
Organic produce is grown without synthetic pesticides, fertilizers, or GMOs. Studies show organic foods often have:
Lower pesticide residues (safer for kids + long-term health)
More antioxidants (linked to reduced risk of chronic disease)
Better soil health (which means better nutrient quality long-term)
But—non-organic doesn’t automatically mean toxic. Many conventional crops still test within safe limits. The fear comes more from marketing than science.

šŸ“‹ Smart Shopping: ā€œDirty Dozenā€ & ā€œClean Fifteenā€
The Dirty Dozen are the top 12 fruits & veggies that carry the highest pesticide residues (think strawberries, spinach, kale). These are worth buying organic if you can.
The Clean Fifteen are the ones with lowest pesticide risk (like avocados, onions, mushrooms). You can usually save money and buy these non-organic.

šŸ‘‰ Google the list before you shop. It’s updated every year by the Environmental Working Group (EWG).

šŸ’” My Personal Strategy
When I first started, I didn’t go 100% organic. I focused on swapping just the Dirty Dozen into organic, while buying the rest non-organic. That way, I cut my pesticide exposure without breaking the bank.

Over time, as my budget grew, I upgraded more. Now I eat 100% organic, but it didn’t happen overnight—it was a process.
🌱 Takeaway: Don’t let greenwashing scare you, and don’t let organic pricing stop you from eating healthy. Prioritize where it matters most, shop smart, and work your way up.

I can tell if you’ll ever hit 6 figures in 5 seconds… by looking at your bio.

Most coaches waste their bio space with quotes, random emojis, or fluff.
But here’s the truth: if you want to attract high-income, serious clients, your bio needs clarity + authority.

Here’s the formula I created (and what I use myself):

1ļøāƒ£ Who you help
2ļøāƒ£ What results you deliver
3ļøāƒ£ How you’re different
4ļøāƒ£ Social proof / credibility
5ļøāƒ£ One strong CTA

āœ… My Example:
Elite fat loss for high achievers 40+ who demand results
šŸ’Ŗ 1,000+ transformations @bodyhdfitness for proof
šŸ“ Miami | Book your strategy call

That’s clear, authoritative, and speaks directly to the clients I want.
If your bio doesn’t tell me who you help + how you change lives in 5 seconds, you’re leaving money on the table.

šŸ‘‰ DM me BIO and I’ll show you how to build a brand that pulls in clients without begging for them.

Why I Quit Eating Red Meat!

I used to love steak. But when you realize the suffering involved—even with ā€œgrass-fedā€ or ā€œpasture-raisedā€ options—it hits differently.

Think about it: How would you feel coming into life with a predetermined expiration date?

That’s why I switched to plant-based alternatives like:

šŸ„ @meatifoods Mushroom Steak: Just mushrooms, packed with flavor!
🌱 @uptonsnaturals Chorizo Seitan: Made from wheat gluten with 17g of protein per serving.

These options aren’t just cruelty-free—they’re LOADED with nutrients to fuel your gains.

🌓 What I Ate in a Day in MIAMI (Plant-Based Edition) 🌱
A lot of people think eating plant-based means you’re limited when traveling or eating out — but trust me, Miami has some of the best plant-based options out there! Here’s what I had in a day šŸ‘‡

šŸ„ž Breakfast – Smoothie Spot
Started the day with high-protein waffles topped with strawberries, blueberries, and bananas šŸ“šŸŒšŸ«.
Peace CafĆ© is a Japanese fusion vegan restaurant that only uses organic ingredients and cooks everything with alkaline water to reduce inflammation and promote healing. Every dish is made with love and intention — clean, high-vibe energy from the inside out.

🄪 Lunch – Vegan Cuban Cuisine
This spot is a must-try! I had their Cuban sandwich made with jackfruit instead of pork — 100% plant-based, but still packed with authentic flavor. šŸ‡ØšŸ‡ŗ
Before I found this place, I thought I’d never get to enjoy a proper Cuban sandwich again after going vegan… but this one brought it all back. Crispy, juicy, and full of flavor — without the cruelty.

šŸ“ Snack – The Carrot (Surfside)
Next up was my go-to AƧaĆ bowl from The Carrot. I’m big on aƧaĆ, and I’ve tried bowls all around the world — but this one is hands down one of the best. It’s refreshing, nutrient-dense, and loaded with antioxidants — perfect for a mid-day energy boost in the Miami heat. ā˜€ļø

šŸ› Dinner – Jrk
For dinner, I went to Jerk — they’ve got a full restaurant in Miami and even a pop-up in the Aventura Mall food court.
Their vegan jerk ā€œchickenā€ made from Daring plant-based protein is insane! Served with rice, beans, curry, and plantains šŸ›šŸ”„
As someone with West Indian roots, it’s hard to find good plant-based Jamaican-style food — but these guys nailed it.

šŸ£ Late Night Bite – Plant-Based Sushi from Target
Yes, you read that right — Target! Found this gem in one of their Super Target locations. 100% vegan sushi rolls that actually taste amazing.
It’s rare to find healthy convenience food like this at big retail stores, but it’s proof that plant-based options are going mainstream šŸ™Œ

This is everything I ate in a day — all plant-based, all delicious, and all fueling performance, recovery, and longevity.

Stop Eating Soy, It’ll Give You Man Boobs!

You’ve heard that one, right? The internet’s favorite bro-science myth.

Here’s the truth šŸ‘‡

Foods like tofu, tempeh, and edamame contain phytoestrogens, which are plant compounds that actually help regulate hormones, not flood your body with estrogen.

Multiple peer-reviewed studies (like those published in the American Journal of Clinical Nutrition) show that soy does not increase estrogen or lower testosterone in men. In fact, it’s linked to improved heart health, reduced cholesterol, and even better recovery thanks to its amino acid profile.

You know what does raise estrogen?
šŸ‘‰ Alcohol.

According to the National Library of Medicine, heavy alcohol use can increase estrogen levels and suppress testosterone, leading to the exact hormonal imbalance people wrongly blame on soy.

So no — soy isn’t the problem.
The problem is misinformation and poor lifestyle choices disguised as ā€œalphaā€ nutrition.

If you want to actually eat smart, train hard, and stay balanced naturally — without cutting out nutrient-packed foods like soy — I’ll show you how.

Spinach Is CANCELLED? The Truth About the Latest Wellness Hoax

Apparently, the internet’s newest villain isn’t sugar, seed oils, or soda…
It’s spinach. šŸ¤¦ā€ā™‚ļø

Yup — a wave of ā€œbiohackerā€ influencers are suddenly calling leafy greens toxic because of oxalates, claiming they cause kidney stones, joint pain, and inflammation.

Let’s set the record straight:

🧠 What Oxalates Actually Are

Oxalates are natural compounds found in plants — like spinach, kale, and beets — that can bind to minerals like calcium.
For most healthy people, this is completely normal and harmless.

šŸ”¬ What Science Really Says
• Research from the National Institutes of Health (NIH) shows that only people with kidney disorders or calcium metabolism issues need to monitor oxalate intake.
• Cooking methods like boiling or steaming reduce oxalates by up to 70%, according to the Journal of Agricultural and Food Chemistry.
• Studies consistently show no evidence that oxalate-containing foods cause inflammation or ā€œtoxicityā€ in the general population.

šŸ„— Why You Should Keep Eating Your Greens

Spinach, kale, and other leafy greens are powerhouses of nutrition — high in:
• Magnesium (for stress reduction)
• Iron & Folate (for energy and red blood cell production)
• Vitamin K & C (for bone and immune health)
• Plant antioxidants that reduce inflammation — the real cause of joint pain for most people.

If your joints hurt or your energy’s low, don’t blame spinach — blame junk food, alcohol, lack of sleep, and poor recovery habits.

šŸ‘‰ Plants aren’t poison. They’re power.

Drop ā€œTRUTHā€ in the comments and I’ll DM you my free Plant-Based Nutrition Guide — so you can eat for energy, performance, and longevity without falling for wellness fear-mongering.

🚨 ā€œWhen Big Food Sued Vegan Mayo and Then Made It Themselvesā€ 🄪
Let’s pull back the curtain on the condiment war you probably didn’t know existed.
Here’s what happened with Hellmann’s — and why it matters for anyone choosing plant-based.

🧓 The Setup
In 2014, Hellmann’s parent company Unilever sued a disruptive vegan spread company (Just Mayo by Hampton Creek Foods) for ā€œfalse advertisingā€. Why? Because that spread didn’t contain eggs — and under U.S. regulation, ā€œmayonnaiseā€ must.

After six weeks of media backlash and public outrage, Unilever dropped the suit.
Mercy For Animals
+1
šŸ”„ The Plot Twist
Fast forward: Hellmann’s quietly launched its own egg-free, vegan-friendly version of mayo-style spread.
Voice of America
+1

Then they rebranded it from ā€œVegan Mayoā€ to ā€œPlant Based Sandwich Spread & Dressing,ā€ acknowledging that the label ā€œveganā€ was driving away some consumers (specifically flexitarians).

Plant Based News
šŸ¤” Why This Matters
What they sued over: A start-up challenged the status quo and paid the price for it.
What they did after: They copied the market they tried to suppress.
What it shows: Big food companies don’t always act in the interest of ethics or transparency—they act in the interest of market share.
What you face: A ā€œveganā€ or ā€œplant-basedā€ label doesn’t automatically mean radical ethics—it might be strategy.
What you can do: Read ingredients, question labels, and decide what integrity means to you.

šŸ“£ My Take
This isn’t about ā€œevil corporationsā€ vs ā€œgood vegansā€ā€”it’s about power, labeling, and consumer perception.
When Hellmann’s shifted its formula and marketing, it wasn’t mere altruism. It was safe business. They didn’t lead—they followed.

āœ… The Bottom Line
Don’t let labeling confuse your values:
If a product says ā€œplant-basedā€ or ā€œvegan,ā€ great—but check what it contains.
If a brand fought against vegan competition only to launch a vegan version, ask why then?

Your choices matter more when you see them in context—not just as impulse buys, but as part of a larger food-system story.
