Taking our garden to Alaska with us by dehydrating and turning everything into a super food green powder! We have kale, onion, spinach, dill, horseradish leaves and a bunch of other random greens and herbs from our winter garden.
Our last garden harvest has started and we have a video coming out soon. So come spend a peaceful day with us on our tiny homestead, as we close down this chapter of our South Carolina life. Watch for the video to come out within the next week.

I could never figure out sourdough… I tried for years and it always felt too complicated, and nothing I made tasted right.
Last year I made a starter, gave up on it, and stuck it in the back of the fridge for almost a year 😅
Recently I started learning how people made bread in Biblical and pioneer times, and decided to try again but this time just keeping it simple. No scale, no exact measurements.
I pulled out that old starter and somehow it worked.
The bread turned out fluffy and really good. Better than anything I made before.
Just a little reminder that sometimes simple really is better 😊

27 eggs in one day from 30 hens! Its safe to say all the pullets have started laying. We have piles of eggs even after giving away a lot of them. The plan was to stock up on enough eggs to last our family for about 10 weeks, which is about the time we will be moving out of our homestead and heading to Alaska. I think we will start selling our flock soon. That way we have one less chore on the homestead and we can focus on the many other things that need to be done before such a big move.

Our favorite kid friendly, fun chicken breed on the homestead is still the silkie! They might not be a dual-purpose breed like our Black Copper Marans, but they make up for it in the natural, motherly instincts that make them great mothers and incubator substitutes, which means a more sustainable way of having an endless supply of chicks if you choose to hatch eggs. So they definitely have a purpose on the homestead besides just bringing us joy with their cuteness and goofy personalities.

Canning the the dual-purpose chickens we just butchered. We have way more meat than I expected and a lot of delicious chicken stock. This has been a multi-day process and it will probably take me another day before I am done. But I sure enjoy it! If everything goes well, I will have a video about this to share with you soon!
