(CN & EN) 2025年9月:做饭是我五十多年来的爱好,从五、六岁开始学着炒饭给自己吃,甚至身上仅有的几块伤疤也都不是和同学打架留下的-都是做饭的纪念。这个暑假,儿子主动要和我学做菜,而且兴致很高。回到大学后,他也在周末自己动手,这让我有了足够的动力去拍视频,好让他有个参考。
对我来说,做饭是创作一道菜,而不是做实验。像大多数中国人的家常做法一样,我做菜没有固定分量,全凭感觉。
我崇尚平淡、自然、真实,因此我的视频也不多加修饰,只记录我每天做的饭。
希望我的频道给我不在身边的子女带去家的温暖。
September 2025: Cooking has been my hobby for more than fifty years. I started making fried rice for myself when I was only five or six years old. This summer, my son asked to start learning cooking from me. After returning to college, he also began cooking for himself. This gave me enough motivation to start filming videos, so that I can keep teaching from afar.
To me, cooking is about creating a dish, not doing lab work. Like most Chinese home cooking, there are no exact measurements — I cook by feeling.
I prefer things plain, natural, and real, so my videos are not polished — they simply show the meals I cook every day.
I hope to share a taste of home to my kids and others.

I cooked my first paella 41 days ago, and I’ve completely fallen in love with it 🥘
Normally I don’t cook the same dish repeatedly (except for staple meals), but I’ve already made paella 4 times 😄
I’m still trying to master the rice. Since my bottom line is making sure it’s fully cooked, my rice often ends up a bit softer than “authentic” Spanish style—like today’s.
I know Spanish people would probably frown at my rice… but hey, at least it was fully cooked 😂 Personally I do prefer firmer rice as long as it is cooked through.
Question: Is soft rice acceptable for paella?

儿子帮厨,半小时左右做的三人晚饭:锅包肉,虾仁炒饭-鱼露泡辣椒是绝配,炒油菜,红油莴笋拌粉丝。 儿子切的肉比较薄,不是传统的大片,但因此炸得比较焦脆,我让他调的糖醋汁,比例很好。家里没有葱,用青蒜丝,味道也很好,而且比葱更有装饰感。

很少出去吃饭,为了比较我的paella和餐馆的区别,我们晚上去附近的一家餐馆吃了一顿。Paella端上来看着有点丑。米没有夹生,比我用红国宝做的质感更好些。但他们的不是煎出来的,而是炒一下然后在烤箱里烤的,因此没有socarrat-锅巴。虽然我用的米不正宗,但socarrat很香。从整体味道来讲,我做的要香很多,当然用我的那些食材的话,价格要翻倍了。 我问store manager为什么没有锅巴,她确认他们做的不是传统的,我标本取样有问题-这是家波斯餐厅!!!
