I need your input before launching the lab test fundraiser 👇
I’m preparing to have my homemade L. reuteri yogurt professionally tested by Eurofins.
Here are the testing options:
Option A Confirmation of bacterial identity using NGS-PCR This confirms whether L. reuteri is present and identifies the dominant bacteria in the yogurt.
Option B Specific L. reuteri CFU count (colony-forming units per gram) This tells us how many viable L. reuteri bacteria are actually present.
Option C Total probiotic CFU count This measures all probiotic bacteria combined, not just L. reuteri.
From a scientific standpoint, Options A + B already answer the main questions most people ask. Option C adds extra context but increases the project cost by about $200.

BIG NEWS!! My L. Reuteri lab-testing project is finally moving forward!
For the past year, many of you have been asking the same questions: - How many CFUs are in my homemade L. reuteri yogurt? - Does the milk fermentation method change the microbial count?
I’ve been working behind the scenes to make this a reality, and I’m excited to share that I’ve now begun the process with Eurofins, one of Europe’s leading microbiology laboratories, to run a full microbial analysis of my probiotic yogurt.
This means: • Professional CFU enumeration • Confirmation of strain identity • A full breakdown of what’s living in the final product AND FULL TRANSPARENCY during the whole process.
This will be the first community-funded scientific project for Cress Dietetics and will help all of us better understand how to combine modern probiotics with traditional home fermentation.
The full fundraiser will launch soon. I’ll share the testing plan, project budget, and how you can participate once I receive the final quote from the lab.
Thank you all for your support! This is a huge step toward bringing more real data, transparency, and evidence-based fermentation into the public space.

L. Reuteri Testing Update: Hi everyone! I have been trying to find a lab that works with individuals here in France but apparently all of them only work with businesses (for tax reasons). SO, instead of being discouraged, I decided that I'm going to open a French Nutrition business to go along with my American, Cress Dietetics business. I'm thinking of calling my French nutrition business "Matt's France" so be on the look out!
This project has had some twists and turns, but I'm really excited for what's next to come. Soon, I will be picking up my new French title (Like a French Green Card so I can legally work and stay in the country) and I'll be able to apply for a small business application. Once I get a business number it'll be full steam ahead!! I'm excited!
In the meantime, I have other fun summer projects like making naturally fermented sodas, fruit wines, and vinegars that I'm really excited to share.
