Hands up, who loves a good Pakora?! 🙋‍♀️🙌🏼
Try my quick and easy recipe, even your kids could make them, you’ll be in for a treat! 😋

Ingredients👇
1 onion
1 red onion
1 bunch of fenugreek leaves
1 bunch spinach
1 small tin corn with peppers
2 tsp fresh green chilli paste
2 tsp garlic paste
1 1/2 cups besan/chickpea flour
1 heaped tbs rice flour
1/2 tsp baking powder
1 tsp coriander & cumin powder
1/2 tsp chilli powder
1/2 tsp turmeric powder
1 tbs dry fenugreek
Salt to taste

Method👇
In a large bowl, add In thinly sliced onion, chopped spinach, and fenugreek leaves. Throw turmeric powder, chilli powder, coriander and cumin powder, salt to taste, garlic paste, chilli paste, dry fenugreek, rice flourbesan flour.

Add in the sweeten corn with it’s own water. Mix together and add only enough water to hold the mixture together, shouldn’t be thick or too thin either.

Heat oil, take approx heaped tbs amount of mixture and drop into the hot oil carefully. (Get an Adult for help)

Fry on medium to high heat till golden all around, turning occasionally.

Serve with your fave sauces. Enjoy! 😁

Such a blessed and spiritually uplifting feeling being back here again to perform our Umrah with the family, tears still stream down our face upon seeing the Ka'aba, feeling emotions like no other, pouring our hearts out to The Almighty 😭😭😭

I always debated to post this Chicken Filled Buns recipe or not, the kids and I love them but Adam is not so keen, he reckoned you guys wouldn't be either, as it happens you loved them so much, I featured them in my first book, The Ramadan Cookbook! 👌✌️🥰

So tell me, what do you think? 😋 OR 😬?

Ideal for Ramadan Iftar, lunch, school lunchbox, days out or picnics. You can also make the Buns plain without the filling, so you can have with Soup.

Ingredients 👇
400grams chicken pieces.
2 tblsp oil
1 tsp oregano
1 tsp red Jalapeño
1 tsp Aromat
1 tsp lemon pepper
1 tsp ginger/garlic paste
3 tbls tomato ketchup
5 tbls peri peri sauce
6 tblsp Sweetcorn
Chopped corriander leaves

Ingredients 👇
Bun Dough
4 cups plain flour
1 tbls sugar
2 tbls melted butter
1/2 cup warm milk and water mixed
7grams yeast
2 tbls milk powder
1/2 tsp Salt
1 beaten egg
1 tbls cream
Sesame seeds for deco

Method 👇
In a bowl add flour, salt, sugar, yeast and milk powder.
Add melted butter and slowly pour the milk and water mixture as required to make a soft dough.

With lightly oiled hands knead the dough into a ball and cover with a cloth and leave to rise, for approx 45mins, it will double in size.

To make the filling. In a pot add oil, chicken, ginger/garlic, lemon pepper, red Jalapeño, oregano, aromat, salt, ketchup and peri peri sauce.
Cook till water evaporates and chicken is done. Leave aside and when mixture is cooled down, shred the chicken and add sweetcorn.

After rising the dough, Knock it down, knead lightly again. Divide the dough into 3" round balls. Press the middle and add approx tsp of the filling and carefully roll the dough over making sure the filling doesnt come out and roll into a ball. Line them up in a tray and allow to rise once again for 20mins.

Brush each roll with the egg and cream mixture and sprinkle se same seeds.

Bake in oven on 180 degrees for 25mins until golden brown.

💫This easy Ramadan Recipe popular Chicken Pizza Pinwheels recipe is so simple to make. The topping is so simple and taste so good. Just roll, bake, and serve. You can batch prepare these and are perfect for Ramadan.

Ready Rolled Pizza dough
400g chicken pieces
1 red onion, sliced
100g sweetcorn
50g red and green pepper chunks
250g grated mozzarella cheese
50g black olives sliced, optional
2 tbsp oil
1 tsp garlic paste
1 tsp chilli powder
1 tsp mixed herbs
1/2 tsp cumin powder
1/2 tsp black pepper
Salt to taste
1 egg

In a pan, heat oil. Add in the chicken pieces, garlic paste, chilli powder, cumin powder, salt and black pepper. Stir and cover and cook until water has evaporated. Add sweetcorn, red onion and mixed peppers.

Unroll the pizza dough and Spread pizza topping sauce over, leave about 1cm border around. Sprinkle over the chicken mixture. Scatter over the cheese.

Starting from one of the short ends, tightly roll up the pizza dough. Freeze for about 15 minutes so the roll firm's up and will be easy to slice. Cut into around 1 1/2 cm slices.

Preheat the oven to fan 180 degrees.

Place on a baking sheet. Shape back into circles if they’ve lost their shape. Brush with egg and sprinkle over more cheese and mixed herbs.

Bake for 14-18 mins until cooked through and golden.

You can freeze these also. Just bake when required.
