Welcome to Nomadic Kitchen, where travel, wild food, and culinary curiosity collide. I’m Tosh—chef, international flight attendant, and experimental cook on a mission to waste less and eat better.

This channel follows my offbeat adventures: from foraging coastal trails and forests, to reimagining iconic dishes like Cassoulet and Feijoada through a plant-powered lens. Whether I’m camping in the backwoods or exploring hidden food spots abroad, Nomadic Kitchen brings bold, globally inspired meals to local farmers' markets and pop-up events across New England
Here, recipes are a living, breathing work in progress—test runs for my upcoming cookbook and the occasional delicious accident. Expect zero-waste cooking, global flavor, mad scientist-ing, and stories from the road and sky.

Nomadic Kitchen

An Ode to Ramen
Today is National Ramen Day… and it feels like the right moment to pause and reflect.
Ramen Soul didn’t happen overnight.
It’s been years of travel, late-night ideas, test bowls, inspiration from kitchens around the world, and a belief that food can bring people together in a way nothing else can.
What started as a concept… became a room.
And that room came alive.
To everyone who’s come out to Loaded Question Brewery, shared a table, grabbed a beer, brought records, stayed a little longer than planned, and trusted us with a bowl — thank you.
You embraced it.
You understood it.
You made it what it is.
Ramen Soul has never just been about ramen.
It’s about connection.
It’s about culture.
It’s about creating a space where food, music, and community all live in the same moment.
To see people eating, laughing, talking music, swapping records, and just being present… that’s the dream.
And now it’s real.
We hope you’ll join us for the next Ramen & Records on Friday, April 24th — the final night of our winter run.
After that, we’ll be taking a short break as we transition back to summer — camping, foraging, and cooking up new recipes from our upcoming eBook at the Kittery Community Farmers’ Market.
From the bottom of my heart — thank you for being part of it.
Ramen Soul lives. 🍜💿❤️
