Yep, and they can also be riposted as they bring themselves up to slam their claws down, they're a pretty cool enemy.

I’ve never heard of such a thing, but I know they can be staggered from plunge attacks. Though this can only be done if they’re facing you.

I play a low level Shrek character and have killed these crabs in almost every way possible. 2 light attacks and a heavy with an ultra will stagger them, a plunging attack can stagger them, the act of actually just falling on them near their center of mass will stagger them, when they raise both claws to do a slam attack they can be riposted (if you position yourself right after a plunge they will almost always follow up with this attack once they recover) and they have a few attacks that can be just straight up parried.

It is, although it is weird. You can parry it when it does its slam attack with both claws. It is open for a riposte for a few seconds. Also the Giant that shoots Arrows can put it in a parry like state.

It's the weirdest thing but they are very parry-able and it is quite useful. FUN FACT, they can also be plunged for a fun and unique animation (dont quote me on that)

Yes, so can the giant snake guys in ArchDragon Peak. The reason people don't try to is mainly because it's a general rule that the big ass bois are unparryable so most tend to not attempt it. That and it can be a bit tricky to pull off effectively.
