The varied content you make is great, but like a previous commenter said, turning some old metal into a knife has proven to be the most awesome sort of build I've seen. Your knives are always incredibly elaborate and are decorated really well. I especially liked the Burl Wood handle you used on the Fantasy Tanto, and the copper handle on the scalpel build.

My vote is for do whatever you want, because I love the variety and just enjoy seeing a craftsman at work. However, I do enjoy the knife making the most and have a soft spot for restorations.

A channel needs its own type of content. One day you might want to do restorations, one day making knives, but in the end variety keeps a person going, so do what you feel.
