Mix of cheese and jalapeños, or cheese and chilli jam. Sometimes with chicken and red pepper too if it’s ‘dinner’ haha. Aaaalways guacamole on the side or inside though.

I'll take a breakfast quesadilla any time any day. But my favorite is when it's a homemade tortilla with some stinky spicy aged manchego that my grandpa will send from Mexico, it melts soo nice and releases it's oil for a melty buttery mess😋
