Pumpkin cheesecake for thanksgiving! (Btw you don’t have to be celebrating thanksgiving in order to enjoy this) Ingredients: Crust: 8 graham crackers or digestive biscuits 1 teaspoon cinnamon 1/2 cup/ 113g melted butter Blend the graham crackers or digestive biscuits in a food processor (you can also crush them in a large plastic bag with a rolling pin) and blend until all crumbs. Mix in the butter and press into the bottom of a 9inch springform pan. Filling: 2/3 cup/ 155g packed brown sugar 1 teaspoon cinnamon 1/2 teaspoon cloves 1/2 teaspoon ginger 1/4 teaspoon nutmeg 1lbs/ .5kg cream cheese 2 eggs 2 egg yolks 1 cup/ 425g pumpkin purée Preheat your oven to 350F/180C Mix the brown sugar, cinnamon, cloves, ginger and nutmeg in a small bowl and set aside. Beat the cream cheese in a standard mixer until light and fluffy. Add in the sugar mixture and beat into the cream cheese. Mix in the eggs one at a time, mixing well after each egg. Add in the pumpkin and transfer into the pan. Put in oven and cook for 30 minutes. Turn temperature down to 325F/160C and cook for 30 more minutes. Topping: 1 1/2 cups/ 360g sour cream 1/2 cup/ 110g packed brown sugar 1 teaspoon cinnamon 1 teaspoon vanilla Mix everything together in a small bowl and put on top of the mostly cooked cheesecake. Spread into an even layer and transfer back into the oven and cook for 13 minutes. Once the cake is done turn the over off and prop the door open to allow the cake to cool for 45 minutes. Remove from the oven and let cool at room temperature until completely cooled. Remove the pan ring and transfer into a refrigerator for at least 6 hours. Serve and enjoy!
