In a cold and grey Reggio Emilia, I was feeling a bit lost since the graduation at the University of Gastronomic Sciences, waiting for job interviews and for the right professional experience that could make me dream as much as Pollenzo did. I needed something to take care of: so I created Butch and Sundance (I wanted something better than Chip ‘n’ Dale. Plus I was quite a lot into Paul Newman movies at that time 😍). 2 sourdough starters, one with a touch of honey, the other simply with water and flour. When I had to leave again my home city to move to Turin for a job opportunity, I brought Sundance with me and I left Butch to my mom, who makes her own bread since then. Sundance is still a young starter, but it’s doing great, and it has always been with me, of course also here in my new Zürich life. 😊 Recently, thanks to a deeper study of the subject, we are making better and better loaves, it’s like we are learning and growing together. I know it sounds like I’m talking about a person, but, hey, a sourdough starter is ALIVE and your duty is to make it stronger without letting it die... so, well, kind of a person! 😅😁 Do you have your own sourdough starter? How old is it? And what’s its name?
