I don't need my ice cream in 5 minutes or less, and I don't mind using heat in the process. I also just received a Cuisinart 1.5 quart ice cream maker that I'm kicking to use. :)

I've read so much over the years that I can make good ice cream that isn't rock hard or icy, but I've completely forgotten why I'm doing what I'm doing. Plus, the ice cream is usually good but not consistent. I need more theory and maybe some info on the newest ingredients.

I'd like to know what is the best sugar substitute to use for making keto ice cream. A high fat recipe that uses egg yolks(for keto) and a low fat/high protein recipe (for those who prefer that). If that is possible, I would really appreciate it.

Please, if possible, give some shortcuts, some options, some few replacements for certain ingredients for those subscribers who either cannot find them in their area, or even those who cannot afford. Anyway, your videos are art. I'm very Thankful for your efforts.

Science and math please. I'm a total nerd. I experiment a lot in my kitchen. Even the recipes I get from others I end up tweaking them to my liking. The science and math also helps direct your next experiments.

Actually, Its a great time for me that you are making ice cream vids. I got sick of various ice cream recipes - trying out condensed milk, whipped cream gelatin and all those stuff, but I never got a perfect recipe. I finally decided to get litres of heavy cream and experiment stuffs, and then your first part video popped up. Fingerscrossed for your final update !
