I’m interested in hearing about ancient grains. I’ve never used anything other than whatever flour is cheapest at the store. What makes ancient grains better? Is it for taste or health? Thanks!

Good to know that you tested negative! Yay! I have a question, today is my 7th day of feeding my starter, I followed your starter recipe. I think it's doing great, I want to bake my first bread tomorrow, if ever it's ready for tomorrow (8th day) should I feed it first in the morning then wait for few hours and use the starter for my first sourdough bread? Thank you very much.

This is exciting! I’ve been baking with einkorn and eating einkorn pasta almost exclusively in my home for a couple months. Mostly it does well. But I’ve yet to get a starter going. Will you be going back and testing the recipes you already have and giving the alternate einkorn directions? (Provided it goes well?) congrats on testing negative!
