I think cheddar may be the most widely used for a multitude of dishes. Smoked cheddar from here in Wisconsin.......life-changing.

Feta. They all excite me equally of course, but mozzarella & cream cheese are easy; aged cheeses are harder. A good feta is commercially hard to find (in my area) & is probably more user/home friendly, where as cheddar is more complicated & commercially ubiquitous

I'm off grid and love making pizza. The only thing I usually need to buy is mozzarella cheese.

Do you make all these kinds of cheeses on your homestead?!? I have not met a cheese I did not like. Waitβ¦ I take that back Iβm not a fan of head cheese though technically not a cheese lol.
