I'm 74 & live alone. I get Walmart delivery once a week. I find the deli salad kits have been in stock where lots of other fresh foods have been out of stock so I have been eating lots of salad. 1 salad kit makes 3 meals for me. I keep small cans of chicken & diced ham on hand & by adding to the salad makes a good meal for 1 person.

My go to foods are brown rice and canned diced tomatoes. The brown rice can be used in soups or with vegetables, canned beans, etc. The canned tomatoes add flavor to any experiment that isn't really appetizing. And no, I don't use SPAM. By the way, when I went into some long unused Bisquick and Pancake mix and found weevils, I found you can make very fluffy pancakes from cake mixes. I was out of eggs so I just added water and was pleasantly surprised. Doesn't rank high on a healthy food scale, but was a nice change.

Since we are in the south...can’t go wrong with cornbread and beans or greens and cornbread. My mom said it was a staple back in the day. I have to admit it is tasty and filling. You can also freeze the leftovers for a later time. 🙌

Not Spam yet. I try to use all the stocked up canned goods. I buy the meats that I need but whatever I have in the freezer like the fish we caught last year and whatever has been in the cupboards that have been staples for awhile is what I will throw together. And to me.......everything is going to go TOGETHER!!! You've gotta have RICE for sure and fine linguini!

Since I'm in Idaho, lots of potatoes! Baked, mashed, hashbrown'd, and my personal favorite (in the air fryer as I type), French fries. 😁

Oh my dear Flo, "SPAM" LOL, tuna fish, eggs, rice, pasta, since I live by myself and on social security disability I am in a very tight budget.

HI Flo I have been making Pumpkin Walnut Chili. It has canned diced tomatoes,frozen peppers and onions or you can use fresh of both also black or white beans.and some green chilies and bulgar wheat or quinoa and red lentils don't try to use the green ones it really does not work to well and Walnuts.And many other things In my IP. If you need the Chili recipe look for it on U tube. Under Pinch of Yum It is amazing.

You are so Funny..I Love Spam...I do not have a Pandemic Food. Here in Mexico life was not all that Interrupted by the Virus. I just order from Uber Eats...so i looked for Spam in the U.S. i could not find it anywhere. I looked at 5 different Supermarkets. No Spam...I went back to Mexico a Failure. I went searching for the Grossest meat on the Planet....and Could not find it....now this was like in May when people were still Hijacking Toilet paper Trucks...lol...I get back to Mexico. One day I walk into this Hole in the Wall Grocery Store...and there is was...the MOTHER LOAD of SPAM...Do you ever feel cheated sometimes even when your Successful ? Im not very proud to say I paid $25 usd for 5 Cans of Spam...Yes...$5 a Can...they look so Beautiful over the Fireplace next to my Bowling Trophy...lol...I'm sure not going to eat them at that Price....lol...Thank You for Reading my Spam Story...Next Week its my Tale of Baked Beans...lol

My go to pandemic food is red lentil curry, a vegetable stir fry dish and steamed white jasmine rice, gotta stay healthy while in quarantine and no alcohol because I’ll easily gain weight that way.
