I would suggest Pokemon Battle Revolution! A medley of some really good underrated tracks (surprised none of the tracks ever made it into the latest Smash Bros. title) would be amazing!

Seeing the brass and guitar combos in the Gen 3 video made me REALLY want a cover of "Fatalize" from Tales of Symphonia. It's one of my favorite boss themes of all time, and I don't know that I've ever heard a version of it that really nails the trumpet and guitar parts the way I know you could!

I have heard so few good remixes or covers or medleys of Jet Force Gemini. That'd be sweet. San Francisco Rush 2049 (the N64 version) also has music insanely deserving of a cover.

I absolutely love that you did Pokémon Colosseum and XD Gale of Darkness! I really would love to use your music for a podcast I am starting.
