Love it! Always been if the opinion that meat takes on smoke as long as it’s exposed to smoke. Wonder if the placement of your briskets near or away from the fire or smokestack made any difference? Cool experiment- thanks for doing it. My wife had a crazy palate too since the birth of our last kid. It’s really weird her and the boy both have sniffers like bloodhounds. Love using my RFX probes with my Solutions Offset. One thing I do since the color is lost on the rings at this point is I have three probes 1 has no ring, another has 1 and the third has 2 rings and that’s how I track it on the app if that makes sense. 😊

I would like to know the opposite. If you put a cold brisket in the smoker and then remove it at 140 and 160 degrees and then finish it in the oven. How does that compare?
