I made this stew last Saturday while we were snowed in. Our grocery was out of chuck roast, so I tried chuck ribs (I think). I had to sub bacon for the pancetta because I was too lazy to go to the next town to get some pancetta. This is a fabulous dish! The leftovers are so good, too! Absolutely worth all the steps and definitely will make it again.
