Why hasn't someone smart like a scientist done experiments on how the convection and the thermo dynamics are mapped in the different smokers? Seems to me the best convection would equal the best smoke and heat distribution.

Love your videos bit this over seemed off. Use real food, not tofu. Cook to temp, and immediately bring both down to 32 degrees. Warm all up at the same time to desire temp then taste. It's the only fair way to compare in your scenario.
