I think an interesting idea could be to do 3v3 with a CPU, where the first team to kill the CPU wins, so each team is trying to protect their CPU and kill their oponents' CPU, with the added chaos of the CPUs actively running into battle. Maybe the CPUs could have more stocks than the players, to make it a bit longer and to add in strategies for killing the other team and then their CPU. Or you could take it in a different direction and make it so that you are not allowed to go for each other and are only supposed to go for the CPUs (But no punishment for hitting the opponent, it is just not an intended strategy). There are many minor ways that you could change this, and I recommend adjusting it to fit what you think would be more fun/better content rather than just using it as "prescribed".

I know this probably doesn't do very well, but finding new or revisiting any of the old multiplayer "couch co-op" games you guys have played is always really fun. I personally love Boomerang Fu and that one boat mini game collection you guys play.

Tag matches; doubles but only one person from each team can fight at once, and to tag out you have to hit your teammate so being at higher percent makes tag ins more dangerous.

1 blindfolded underdog vs a level 9 cpu (or online), then the other three try to help him win the match. Then take turns on who is blindfolded. (Feel free to turn down the cpu level if it gets too difficult) Same thing could work for Mario Kart World. One guy plays blindfolded and the other three try to guide them thorugh the race by telling them to turn, trick, use item, etc. Sounds like it could make for some fun chaotic moments.
