What’s better for long-term health & performance: eating in line with hundreds of thousands of years of our evolution or following the diet models of the last couple hundred?

To me, it seems obvious. If you look at everything from a first principles perspective, it doesn't matter what the new "science" trend is for a new way of eating.

We think we know way more about our biology than we actually do. There are so many things that we don't know, that we don't know.

So what's the best approach? Eat in a way that has shaped our biology for millions of years, or play a guessing game and act like we can actually calculate every single variable in our infinitely complex bodies?
