Abatis seems like the most rime efficient to construct, and probably the most effective. Add a few trenches and you should be golden

Gabions. The others seem to me to have the disadvantage of sticking the deaddos in place and leaving them otherwise intact. The gabion can be used to funnel them into kill zones, booby-trapped buildings etc. Speaking of, I imagine we would be dispatching them mostly with sword, bayonet, and explosives rather than musket or cannonfire. That is, use the gabions to create blind alleys, or even thin out the herd over distance, until they can be engaged individually or in small groups in melee. Disregard gunpowder for the noise and smoke, except where large stationary mines can be planted in trap areas to be triggered by larger numbers of the foe, or to cover movements in the field, retreat etc.

Abatis are fast, can withstand the horde's weight, and can have shooting platforms built behind them to fire down into the undead like fish in a barrel.

Gabions get the bonus of giving you a trench while making them while the abatis and chevaux de frise won't stop the zombies for too long.

The gabions are the only ones with the mass to keep zombies from trampling them to dust. Also, they break line of sight, so the zombies might miss us entirely.

None of them will adequately defend with a large enough volume of zombies. The sharp ones won’t deter zombies either, as their defense capability is largely dependent on psychological factors.

I feel like gabions can easily be supplemented by a wooden or metal fence, similar to the kind used in sengoku japan. It's whole purpose is to stop the zombies from coming in and allow the humans to shoot out. Maybe it could also be sharpened at the top.

The second and third choice seems solid at first until the horde become too much and trample the impaled friend rendering the point useless. The gabion on the other hand you can stack it endlessly and create basically medieval fort
