Making cheese croquettes takes 3 days! The recipe: Day 1: make a strong vegetable fond. Onions, garlic, leek, celery, carrots. Add some parsley, some bay leaves, and peppercorns. Simmer for 2,5 hours. Strain all the vegetables. Day 2: make the ragout. Make a roux of 100 gram flour and 80 gram butter. Add half a liter of the vegetable fond until it cooks. Take from the fire and add 6 grams of gelatine and mix. Add 2 eggs and mustard, pepper and nutmeg. Not to much salt because the cheese is salty! Now you mix 250 grams of 3 year old! Dutch cheese. It must be very old because of the moisture that is in young cheese. (Your croquettes are going to explode when you bake them with young cheese).The last thing you do is mix some fresh cut parsley. Put in the fridge with a film of plastic to avoid a skin. Day 3: make the croquettes. This are two steps: fine breadcrumbs and coarse crumbs. I take an ice cream scoop to measure my portions. Make a ball and then roll them in the form of a croquet. All this in the fine crumbs. NOW COMES THE MESSY PART! Prepare egg-white with a little bit of flour in a bowl. Sop the croquettes completely in this mixture and roll them in coarse crumbs. Ready!! Bake them for 3 minutes in oil of 160%! Not longer and not hotter. When they are frozen it takes 5 minutes.
