If I had not read they were noodles, I would have been hard pressed to figure out what they were. Like the commenter below me, I thought it was hair at first, but realized it must be something else since you were in a kitchen.

Cu Da is one of the biggest rice noodle producing villages in northern Vietnam. Certain times of the year they make soy sauce as well.
