The Conquest route of Fire Emblem Fates leans heavily on the bagpipes to distinguish pseudo Europe from psuedo Japan. You could probably call it the main instrument of the game.

It's not the main instrument for most of the song but in Ramlethal's xrd theme there's a section that is primarily just bagpipes that I always really loved.

The only song I know that used bagpipes for a bit is "Gyah ha ha!" from Deltarune chapter 4, and it does fit the character tied to the song

They’re not the main instrument, but Skirmish 3 from the Battlestar Galactica: Deadlock OST (the best track from a banger OST) uses bagpipes pretty heavily when it’s not using that Electric Bass (or whatever it is, i can’t tell).
