That’s my favorite kind of haul. I would make heirloom tomato,cucumber salad with strawberries and a strawberry and balsamic dressing. Fried or baked oyster mushroom sandwich with arugula and cauliflower purĆ©e with miso and peppers as a side. And Zucchini fritters with chickpea flour(besan) and grilled peaches with maple syrup for dessert ā¤

Savory oyster mushroom kebabs with a fresh salad consisting of tomato, cucumber, parsley, jalapeƱo, sumach, olive oil and lemon juice served with garlic mashed cauliflower (maybe even with butter beans) and pickled onions. Fruits as dessert. And zucchini for another dish on the next day maybe ā˜ŗļø

My first thing would be a tabbouleh inspired salad (with added cucumber), possibly served with grilled oyster mushrooms. Just imagine the fitted pitas you could make with that combo… yum! I might make a tzatziki’esque sauce using the zucchini to go with it. Odd combo, possibly, but I promise they go wonderfully together. Oh, and plain strawberries for dessert. šŸ’š

Chinese sweet and sour sauce. You don’t need the fast food or instant version for it to taste good. Add red and yellow sweet and citrus fruits to a tomato base, either with a pasta sauce or just mashing tomatoes - bell peppers, oranges, whatever you have in your pantry. Roughly dice and mix them up. Add sugar if you like, or leave it out and enjoy the natural fruity goodness. Usually heated up and poured over meat or fish, but salad, rice, steamed eggs, tofu, egg tofu are all really good options to use the sauce with too. Feel free to have it cool.

I wouldn’t cook the fruit just eat as is. I’d make an assada marinade and turn the mushrooms into tacos and use the cherry tomatoes and jalepinos for salsa to go with it.

shalom ok…with the savory ingredients, i’d run with buckwheat or quinoa for a salad; the fruit would be great as an appetizer with a drizzle of balsamic ..a homemade agua fresca would be a good accompaniment

That looks so good. I'd make a Thai yellow curry with everything in it. Probably keep the cucumber and tomatoes chopped in a cool chunky salsa on the side. Now I'm hungry šŸ˜‚

I am hyperfocused on pasta salad this week. Various veg and pickled veg, kale, with HP seitan or tofu, pasta with a simple oil and vinegar dressing. Top it with some raw-cashew 'parmesan' and roasted edamame. So good.

I'll grill or oven roast cauliflower zucchini and mushrooms together (+garlic oregano paprika) and serve it with pita, yogurt dip (+ sumac cucumber dill) and a salsa made from heirloom tomatoes, stone fruits and jalapeƱos. I'll have the strawberries and cherry tomatoes as a snack with crackers and cream cheese or hummus (+parsley)..

Roasted cauliflower or cauliflower soup. Stuffed zucchini,. Mushroom risotto or deep fried crispy mushrooms + strawberry salad with jalapeno,and peach cobbler or grilled peaches with ice cream

I absolutely love your channel. I so want to go completely vegan but my digestive system struggles with the gas/bloating from the beans. But i love beans! Do you do something differently to minimize the gas?

It’s 102 degrees in Central Valley California, so I’d make a chilled Farmer’s Market salad with strawberry balsamic dressing and peach slices for appetizers or dessert. šŸ“šŸ‘

I would grill the mushrooms, zucchini, cauliflower then make some pico to top it. The fruit I would just eat as I was grilling šŸ˜‚
