Cruciferous veggies, cucumbers, tomatoes, peppers, salad greens, plus food for our dogs such as pumpkins and winter squash (we like them too) and various beans and carrots. We have two canners, two dehydrators and just added a freeze dryer to the show! Bring it!

I love pressure canning! I have canned so many things and I think my favorite thing to can is chicken.. and angus beef..and ..jalapeño peppers to make cowboy candy 😅.. everything

Tomatoes and more tomato products, beans, carrots, pickles, jalapenos, maybe pickled beets, um... brain fart whatever there is extra of. Then dehydrating potatoes and low liquid stuff. Juicing various berries and canning them. If enough strawberries, some wine.

People don't realize how hard it is to mess up pressure canning. Just set timers and don't forget about it and you are good, nothing will blow up unless you forget about it or break the rules. I was scared until I ran a few loads because I heard all the nonsense about them blowing up on you.
