Hi Rick, Thank you for the very nice videos of the Mexican kitchen. Last weekend I made the tacos El pastor from your recepe and from the barbecue. My parents visited us as a surprise when I was cutting the meat so I made some extra and had then to dinner. Also fresh made corn tortillas (what a work of you are not used to it) but it was a winner!! Thx from The Netherlands

What are the determining factors for using a corn or flour (or mixed) tortilla in Mexican cooking? Are certain recipes better with corn vs flour tortillas (or vice versa)?

Salsa canning recipes you have had good luck with? I have been making and canning tomato soup but and have made salsa several times in the past I need to get going on a stock of canned salsa. Types of varied hot pepper flavors advise too. Thanks Mr. RICK๐

Hi Rick! I'm new to your show. Could you explain aqua frescas? I loved the mango drink I had at a great taco truck in my neighborhood. It went so well with the tacos and was such a beautiful refreshing drink. A few years ago I worked at a homeless shelter and we received a gift of a huge amount of watermelons.๐ A friend of Mexican heritage suggested making it a juice as well as slices. Gosh, it hit the spot for everyone. It was so delicious. But what are the drinks using fruits like horchaca? Pardon my spelling. Thank you for asking. I love your show

Where I live it is very difficult to get fresh tomatillos. Can you talk a bit about canned tomatillos and when they can/cannot be used as a substitute for fresh ones?
