A good plumbing job will be just fine in any weather, its 5 below right now where I live. I plumbed my house with copper kept everything out of the exterior walls never have had any problems.

I'm renovating my bathroom now. I'd like to ask when a vapor barrier is needed and if I need one on an exterior facing wall in the North Texas climate.

No test needed . Just ask a plumber , home owner or renter from a northern state which is better . I've had poly pipe freeze solid and survive just fine. The weak link is the connectors

I've watched other websites to test on the pex and they withstand an incredible amount coppers just more expensive but it's better than PVC

I'd prefer copper any day of the week. Just be smart about how you plumb your house and insulate the pipes. No nano particles of plastic ingested in me, thanks much.
