If you'd like to appeal to a wider audience, it might be good to change names, but if Amiibo are your passion and your channel is a personal project that's special, keep the name. It's your choice though, so do what feels good :)

I say, branch out to new content for sure but you don't have to re brand if you don't want to. It's not your fault there's nothing going on with amiibo at the moment

IMO, all that matters is what you find comfortable, for yourself: Either brand recognition, or a rebranding/recycling, for greater creativity. Viewer feedback I'd always welcome, but that's just me. All that said, I'm fine with either decision you make.

Amiibo Doctor
considering doing the occasional pieces of content on other non-amiibo meta niche topics like my favorite youtuber @BigYellowSilly cause there's not much left to cover for competitive amiibo (hence no recent vids) but I'm still obsessed with other ideas, e.g. Pokemon Tera raids strats, Team Fortress 2 64-man 2fort Instant Respawn meta "strats", maybe organizing a prize pool Card-Jitsu tournament on a Club Penguin fan server, etc.
The website would still be amiibodoctor.com no matter what, but would you watch the "other weird metas" channel or should I stay only with amiibo and keep an eye out for new amiibo topics to cover?
