Odisha __chena poda 😋 Please Sagar sir try this amazing desert recipe! Love from odisha ❤️ 1. Firstly line a baking pan with some chopped banana leaves. Grease the banana leaves with some ghee. You can also use butter paper or parchment paper instead of banana leaves. Or you can skip everything and just grease the pan with ghee on all sides. Also preheat oven at 180 degrees celsius for 15 minutes. 2.Then take the 250 grams of fresh paneer or chenna and crumble it very well. 3. Then add ½ cup sugar. You can also use ½ cup jaggery powder instead of sugar. 4. With clean hands mix sugar with the chenna. 5. Then continue to mash and knead the paneer or chenna like the way you would knead a chapati dough 6. The paneer mixture has to become loose, light and with a cake batter like consistency. The more light and softer the consistency, the better the chenna poda tastes. You can see the consistency below. I have not added any milk or water. In case the mixture looks dry, then you can add a few tablespoons of milk or water. Some amount of fat is released while mashing chenna and thats fine. 7. Once you get a batter like consistency in the paneer mixture, then add ½ teaspoon cardamom powder and ½ tablespoon rice flour. Optionally a pinch of baking soda can also be added, but does not make any difference. Instead of rice flour, you can also use fine rava (sooji). Some chopped dry fruits like cashews, almonds and raisins can also be added. 8. Pour the chhena poda mixture in the pan. Shake the pan gently so that the chenna poda mixture spreads evenly. Level the top with a spatula 9. Place the pan in the oven and bake chena poda for 30 to 45 minutes. If using OTG, use the toast mode and keep pan in the center. Bake chhena poda till the top crust gets a dark golden color. Oven times vary, so do keep a check. In some ovens baking this paneer cake can even take less time. I am giving an average time that will work for most ovens. making chena poda recipe 10. Remove chhena poda from the oven once done. chena poda recipe 11. Then check with a bamboo skewer or toothpick and it should be clean. There should be no sticky batter on the toothpick. chena poda recipe 12. Let the chhena poda cool completely in the pan. Then remove it. chena poda recipe 13. You can slice and then serve chhena poda. Leftover can be refrigerated for 2 to 3 days. 14. Serve chhena poda as dessert after meals or as a sweet snac

Litti Chokha is a traditional dish from the Indian state of Bihar. It is made with roasted wheat flour balls (litti) filled with a spicy mixture of sattu (roasted chickpea flour), herbs and spices, and served with a roasted eggplant and potato mash (chokha). Ingredients: For Litti: 2 cups wheat flour 1/2 cup ghee Salt to taste Water as needed 1 cup sattu (roasted chickpea flour) 1 tsp ginger paste 1 tsp garlic paste 1 tsp ajwain (carom seeds) 1 tsp kalonji (nigella seeds) 1 tsp cumin powder 1 tsp coriander powder 1/2 tsp turmeric powder 2 green chilies, finely chopped 2 tbsp chopped coriander leaves 1 tbsp lemon juice Salt to taste Water as needed For Chokha: 1 large eggplant 2 large potatoes 2-3 green chilies, finely chopped 2 tbsp chopped coriander leaves 1 tbsp mustard oil Salt to taste Instructions: For Litti: In a mixing bowl, combine wheat flour, ghee and salt. Mix well. Gradually add water and knead into a stiff dough. Cover and keep aside for 20-30 minutes. In a separate mixing bowl, combine sattu, ginger paste, garlic paste, ajwain, kalonji, cumin powder, coriander powder, turmeric powder, green chilies, coriander leaves, lemon juice, and salt. Mix well. Divide the dough into equal portions and roll them into balls. Flatten each ball with your palms and place a spoonful of sattu mixture in the center. Bring the edges together and seal the ball. Preheat the oven to 180 degrees Celsius. Grease a baking tray with oil. Place the stuffed balls on the tray and bake for 25-30 minutes or until golden brown. For Chokha: Preheat the oven to 180 degrees Celsius. Prick the eggplant and potatoes with a fork and roast in the oven for 30-40 minutes or until tender. Remove from the oven and let them cool down. Peel the skin of eggplant and potatoes and mash them together in a mixing bowl. Add chopped green chilies, coriander leaves, mustard oil, and salt. Mix well. To Serve: Cut the baked littis into halves and serve hot with the chokha. You can also serve the chokha with some raw onions and a dollop of ghee.

Up: litti chokha To prepare the dough, take a mixing bowl and add wheat flour, mustard oil and a pinch of salt. Add some water and knead a soft dough. To prepare the filling, take a bowl and mix sattu (black gram flour), pickle masala, mustard oil, lemon juice, kalonji, ginger, coriander leaves, green chillies, and salt together. Preheat oven to 180 degrees Celsius. Now divide the dough, flatten to the desired size and place a spoonful of the filling. Close the dough by the edges and roll it into a ball. Put these balls on a baking tray and bake. Then flip to the other side and bake till it is cooked properly. Put your oven on broil mode for 2-3 minutes turning both sides to get a crisp covering. Now to prepare the chokha, wash, dry and slit the brinjal. Put an aluminium foil on the baking tray and place the brinjal and tomatoes on top. Roast them on broil mode or highest temperature. Once done, peel the brinjal and tomatoes and then mash them well. Transfer these into a bowl. Add garlic, salt, mustard oil, lemon juice, green chillis and chopped green coriander leaves in the bowl. Mix the ingredients well and the chokha is ready to be served. Transfer the chokha to a serving bowl. Dip the litti balls in some melted ghee and place along with the chokha. You can also serve this dish with some kadhi or chicken/mutton curry. Enjoy the burst of flavours of this authentic Bihari delicacy, rate it and let us know how it turned out to be. You can also serve the littis with tomato chokha or potato chokha. Just replace the brinjal for tomato or potato.
