24hrs 'Sous vide' in a vac seal bag with 1 x can of beer, 1 x carrot (diced), 1 x Onion (diced).
Create a baste using your favourite seasoning and rendered down beef or lamb fat, then fry or grill while applying baste untill charred on the outside.
Its a good idea to leave butchers twine on through the whole process so you can leave the bone in and eat them like a giant drumstick at end.
Don't forget to keep the broth out of your Sous vide bag to make gravy or use as stock for another recipe.
