Put parts in plastic tubs with lids . Label tubs with pen on tape to speed searching through multiple tubs . Put a towel or shirt over build on the bench during s break to keep birds from pulling all the wires out for nests

Bigger tip: Do 4K videos instead of just photos if you can... If something slips off the table or a spring pings off as you lift something, the video might give you clues to which way it went. It's also helpful for the bits you thought were obvious so you didn't take a photo, but it turns out you can't remember which way up it went.
