God of War series. Throughout the story Kratos "fights"(more in methaphorical way) a younger version of himself and tries to become a better person. Batman Arkham Knight, where Batman fights the Joker within his mind. And probably not what you're looking for, but in Elden Ring there's a boss who literally mimics you and fights you with your own weapons, stats and armor.
