Coffee has a big history in my City and I ever since wondered if we discovered all the possibilities. I mean it took roughly till 1920 to fully utilize pressure as a mean for coffee extraction. And recently James Hofmann (a coffee youtuber and roaster etc.) discovered that using a tiny amount of lard (yes, lard, from pigs) to roast coffee in an airfyer actually massivly improves the coffee quality.
