By the time she's an adult, she's no longer using those eyes in combat, she can certainly use them to find out whether her kids or her husband are up to any mischief. According to one of the earlier data books, there are two people that Hinata wants to fight. The first is her cousin Neji, who brutally defeated her during the Chuunin Exams. Sadly, that rematch will never take place.
She also wants to fight her father Hiashi. This hasn't happened in canon, and it's not clear whether it's something she still wants - but it's interesting to think about what kind of battle the two would have if they tried.
