With the rise of food cost, opting for more budget friendly food items like bananas, dry oats, peanut butter, legumes, etc has helped me stay consistent w/ eating a healthy diet. One of my fave breakfast meals at the moment is banana bread baked oats; main ingredients are dry oats, bananas and plant-based milk. It’s sooo good 😭, it is the one thing I look forward to eating at the start of my day. Even on a low budget, eating plant-based can be affordable, healthy, and fulfilling.
