Vincenzo's Plate

Pappardelle al Ragù 🍝 This dish is straight from my family traditions! Pappardelle with slow-cooked wild boar ragù. Every year, we enjoy it at my great-grandparents’ old house in the mountains, and it never fails to bring everyone together.

The pasta melts in your mouth, the ragù is rich with love and patience, and if your butcher can get you wild boar, you MUST try it at least once in your life. It’s an unforgettable flavour ❤️

Reminded me of a cabin near the peak of the tallest mountain of Ukraine, which I hiked to this summer. Volunteers live there to keep up the camp all year round, and they cook food in there everyday. When I was there, they had borsch, and they usually cook different kinds of porridge with veggies and meat. They use the nearest springwater for everything, even during summer it's ice cold. One of the volunteers told me her husband with their friends should come back from a neighboring village soon with a whole ram/sheep for dinner. This woman was from Donbas, ruined city of Avdiivka. All the hikers there are such wonderful people. The mountains and the freedom they give truly connect all people of my country, language doesn't even matter. Ukraine is truly a bilingual country. I only had a tea there as I had to hike along in continue of my journey.

I love meat ragu's - Had a delicious Wild Boar Ragu in FRiuli and Anatra in Venice - I tried making myself over there but had to buy wild boar sausages from a farm shop which I skinned and used the meat enriched with good red wine, I thought it was very good but not as good the antica trattoria in the Friulian Alps <3

I can’t go wrong with this wonderful dish. Had it in Sermoneta, that medieval hilltop village near Rome.
