Oh no! I definitely can relate. I don't have many orders yet in my new business but I tend to overthink every single recipe and keep swapping ingredients. The issue is I am gluten free, sugar free and just recently went vegan thus it makes everything more complicated because I am not just searching for an egg replacer but also for 3 aspects of the egg so I have to keep mindful of alll ingredients working together. Also I have a sensitive pallet and can tell when flours get old and tend to get nervous when something smells different. I also make things really difficult for myself not wanting to compromise on my values but I don't have a melanger and even if I did I haven't been 100% happy with the way dairy free / sugar free white chocolate behaves or tastes. It seems for my order of my next cake pops I do jave to use dairy white chocolate but at least I have alllll my rainbow food powders so everything will still be naturally colored. I stress myself silly because I just dove into this no soy, no dairy, no sugar, gluten, eggs, artificial colors and flavors, carrageenan ect and wow very limited options and it's more expensive and I have a zero dollar budget just taking from our family grocery money. I feel soooo guilty. I am not naturally a book keeper either and wowzer my mind just becomes a puddle with all that I am new to. I am really going against the grain with my personality just normally eye balling things to now I HAVE to keep track of my time! That's is literally the worst part for me. And to see how inefficient I am and how many times I over heat chocolate and have to re temper . I gotta stop there because there is sooo much going on in my head every day trying to start my business and my 3 kids not letting me think about measurements when I have to focus. I have come a long way with organzational skills in two montha though and I am thankful but man I gotta figure out how to stop making mistakes. I didn't say but my main part of my business is chocolates but I also have people asking for cakes and cake pops. So I have a taste test I gotta make two different gluten free options and step into my food science self π€£π€£ I heard if you add boiling water to chickpea flour it will neutralize the taste! I really don't like any pre made pix, so game o
