Honestly, my favorite Star Wars dad is Owen Lars. While not Luke’s biological father, he (and Beru) cared for Luke for his entire childhood and teenage years, working in harsh conditions to keep Luke protected from Vader. He deeply cares about Luke, and while he’s not Force sensitive and couldn’t raise Luke as a Jedi, he loved Luke like a son. He even fought Reva to protect Luke. He had tough love for sure as Luke got older, but his insistence that Luke stay another season was critical in keeping him off the Empire’s radar for as long as possible. He ultimately gave his life to protect the son of his stepbrother who he met once. That’s a testament to the sort of man Uncle Owen was!

Probably Bail, while we don't see much of his relationship with Leia, you can tell he had a massive impact on her and is probably a lot of the reason Leia was as strong and level headed as she was

Uncle Owen was always Luke's true father, and was obviously a massive part of why Luke turned out the way he did. Owen or Bail for me.

There may have been other, better choices that I can't think of right now. But I believe Bail Organa is better than all of those three. Han ran off to be a pirate again when Ben went dark. Din brings toddlers into war zones. And well, Anakin is likely to kill kids so...
