Poor Man's Gourmet Kitchen

20 years ago, I was introduced to Chorizo. It was being sold by a Mexican coworker, mixed in with eggs and potatoes for breakfast Burritos his wife would make, so he could sell them to us for a little extra money on the side. On Thursdays we'd get Chili Relleno Burritos, and boy-o-boy were they delicious. At the time, I worked as a Boom Truck and Hydralic Crane Operator so I was often stuck in the cab for long hours, baby sitting a load. It was always a good idea to buy burritos I could take with me to eat because I never knew when I was going to miss lunch.

This is a my Oork Chorizo recipe, and it is spot on. I actually prefer Beef Chorizo when I mix it into eggs or rice. That's the beauty of a recipe like this one. You can easily swap the pork for a Beef Chuck or Brisket and use the trimmed fat with the same ingredients.

I wanted to share this recipe today with most of you that haven't seen or tried it before because I'm making chorizo breakfast Burritos today for my family. Chorizo can also be purchased in grocery stores for about $2 per lbs and you can find it wear refrigerated Mexican products are sold, by the bacon and sausage, usually. Mexican Markets always have it, too, and very often make it fresh.

Oh, I forget to mention that Chorizo is excellent with Ramen. Yep, restaurant quality or mixed in with cheap packages of ramen noodles. 🍜
