This is going to be interesting. Though, I think one way of handling it might be focusing more on the overpowered characters growth internal struggles and as a person instead of their power set. That would be one way

I’m trying to write a novel where one of the main characters is OP, but not in a way that solves any of the problems near and dear to his heart. Poor guy can’t even heal people.

Some anime handle overpowered protagonists really well, some are just power fantasy slop but still entertaining as heck, and some are just garbage that gets so boring... I think it's still the character development that makes or breaks the story. The flatter a character arc is, the more boring it becomes.

Having OP characters is fun for me, from Superman to Anakin. I like how then he story needs to be framed in a way that doesn't resolve by just punching harder. One example I really like is Dragon Ball Super's Tournament of Power. A lot of fighters with varying levels that st the end of the day all but 2 were weaker than Goku. But with the rule that "No Killing Allowed" it turned the tournament into a Super Smash Bros. Battle Royale. Then you saw a lot of interesting techniques and characters could shine through their versatility and ingenuity in order to push their opponents out. Goku might very well one shot Ribrianne for example, but sice he can't finish her he needs to look for scaling slowly and giving time for both of them to leave a severe impression on the spectator

Reinhard from re Zero as an overpowered character was used well on the story. Despite his amazing powers and additional abilities, he couldn't able to get there on time because of some issues on other things like with his family

I can not stand when writers make characters so overpowered. It's soooo boring, and anime is guilty of this a thousand times over.
