It is almost certain that they are developing/testing Microsoft apps for iPhone, which requires Xcode. Xcode can only be used on Mac.

And there are also windows machines at apple. These companies have lots of software products that need to work properly on all platforms. So they have to have their competitor's machines in order to test that the software works.

They might be using Windows Cloud Machine on Mac, many companies do this in order to secure its data.
