I agree with the other comment, the knives you recommend. Plus if you sharpen the knives yourself, a tutorial would be helpful.

Hey chef, what's the 3 piece stainless grill press you use to weigh down chicken and meats and get that even sear? I've seen other people use it but I can't find it anywhere
