Most people concerned about personal data/privacy protection in a vehicle most likely are carrying a smartphone. Like with most technology older people will eventually either deal with it, learn to like it, or, over time pass-away (I am 58) and the youth will embrace it. The cycle will then repeat.

The issue with the auto industry and data collection lies in how poorly regulated it is compared to other sectors, and the hassle required to opt out compared to consumer electronics. With smartphones, you can easily adjust a few settings to disable location sharing and data collection. Vehicles, however, complicate this process by catering to data brokers eager to access this information. On top of that, there's the problem of weak security measures surrounding this data, ride sharing, rental cars, and the concerns just keep piling up...

It's obviously going this way, imagine something simple like being on a road trip and needing the toilet "hey car, find the nearest public toilet and add a stop on our route" SO much safer than a human trying to Google with their phone or manually trying to change the nav while driving.

I want my car to be as reliable as possible over 10-15 years. Any tech that’s likely to fail or glitch in that timeframe will be a nuisance.

With the increase in features and decrease in physical controls AI, voice and gesture controls are becoming more necessary and beneficial so reluctantly I can see more AI as a positive.
